Description

Ingredients

  • 1 cup Cottage Cheese
  • 4 large Eggs
  • 1/2 cup Parmesan Cheese
  • 2 tablespoons Fresh Chives
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • Salt and Pepper to taste
  • 1 cup Bell Peppers, diced
  • 1 cup Spinach, chopped
  • 1/2 cup Sun-Dried Tomatoes, drained

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix the cottage cheese, eggs, and Parmesan in a mixing bowl until smooth.
  3. Add chives, garlic powder, and paprika; season with salt and pepper.
  4. Incorporate the bell peppers, spinach, and sun-dried tomatoes, folding gently.
  5. Transfer the mixture to a greased baking dish.
  6. Bake for 25–30 minutes until golden and puffed.
  7. Cool for a few minutes, then slice and serve warm.

Notes

For a dairy-free version, replace cottage cheese with silken tofu and Parmesan with nutritional yeast. Customize with additional vegetables as desired.
