- 1 cup Spinach, chopped
- 1/2 cup Sun-Dried Tomatoes, drained
Instructions
- Preheat your oven to 375°F (190°C).
- Mix the cottage cheese, eggs, and Parmesan in a mixing bowl until smooth.
- Add chives, garlic powder, and paprika; season with salt and pepper.
- Incorporate the bell peppers, spinach, and sun-dried tomatoes, folding gently.
- Transfer the mixture to a greased baking dish.
- Bake for 25–30 minutes until golden and puffed.
- Cool for a few minutes, then slice and serve warm.
Notes
For a dairy-free version, replace cottage cheese with silken tofu and Parmesan with nutritional yeast. Customize with additional vegetables as desired.
