- 2 pounds baby potatoes
- 8 ounces feta cheese
- 1 lemon, zested and juiced
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and halve the baby potatoes, then place them in a large baking dish.
- In a small bowl, mix together the olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper.
- Pour the mixture over the potatoes and toss to coat evenly.
- Place the feta cheese in the center of the potatoes.
- Bake in the preheated oven for 30-35 minutes, or until the potatoes are tender and golden.
- Garnish with fresh parsley before serving.
Notes
- For a spicier kick, add red pepper flakes to the olive oil mixture.
- Serve with a side salad for a complete meal.
