Description

A delicious and easy recipe for baked feta potatoes with a zesty lemon flavor.


Ingredients

  • 2 pounds baby potatoes
  • 8 ounces feta cheese
  • 1 lemon, zested and juiced
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and halve the baby potatoes, then place them in a large baking dish.
  3. In a small bowl, mix together the olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper.
  4. Pour the mixture over the potatoes and toss to coat evenly.
  5. Place the feta cheese in the center of the potatoes.
  6. Bake in the preheated oven for 30-35 minutes, or until the potatoes are tender and golden.
  7. Garnish with fresh parsley before serving.

Notes

  • For a spicier kick, add red pepper flakes to the olive oil mixture.
  • Serve with a side salad for a complete meal.
