Description

A comforting and sophisticated dish featuring juicy chicken pieces enveloped in a creamy, buttery lemon sauce, accented with fresh herbs and spices.


Ingredients

  • 10 dark meat chicken pieces (like drumsticks and thighs, trimmed of excess fat)
  • 2 tsp kosher salt
  • 1 tbsp smoked paprika
  • 1 tbsp Montreal chicken seasoning
  • 2 tbsp butter
  • 1/2 cup red onion (minced)
  • 1/2 cup flat leaf parsley (chopped)
  • 1 tbsp garlic (minced)
  • 1/2 tsp red pepper flakes
  • 1 cup chicken stock
  • 1 tbsp fresh lemon juice
  • 1 cup freshly grated Parmesan cheese
  • 1/3 cup heavy whipping cream

Instructions

  1. Melt the butter in a large skillet over medium heat until bubbly and fragrant.
  2. Add the minced red onion and sauté for about two minutes until translucent.
  3. Toss in the chopped parsley and minced garlic, mixing well.
  4. Pour in the fresh lemon juice and red pepper flakes, stirring to combine.
  5. Add the chicken stock and whisk in the Parmesan cheese until melted and thickened.
  6. Introduce the heavy cream, stirring until smooth.
  7. Season the chicken with kosher salt, smoked paprika, and Montreal seasoning.
  8. Pour the lemon butter sauce over the seasoned chicken in a baking dish.
  9. Bake in a preheated oven at 375°F (190°C) for 1 hour and 45 minutes, flipping halfway through.
  10. Broil the chicken at the end to crisp the skin and baste in sauce.

Notes

For an easy cleanup, consider using parchment paper in the baking dish. Make the sauce a day in advance for quicker preparation.
