- 1 cup chicken stock
- 1 tbsp fresh lemon juice
- 1 cup freshly grated Parmesan cheese
- 1/3 cup heavy whipping cream
Instructions
- Melt the butter in a large skillet over medium heat until bubbly and fragrant.
- Add the minced red onion and sauté for about two minutes until translucent.
- Toss in the chopped parsley and minced garlic, mixing well.
- Pour in the fresh lemon juice and red pepper flakes, stirring to combine.
- Add the chicken stock and whisk in the Parmesan cheese until melted and thickened.
- Introduce the heavy cream, stirring until smooth.
- Season the chicken with kosher salt, smoked paprika, and Montreal seasoning.
- Pour the lemon butter sauce over the seasoned chicken in a baking dish.
- Bake in a preheated oven at 375°F (190°C) for 1 hour and 45 minutes, flipping halfway through.
- Broil the chicken at the end to crisp the skin and baste in sauce.
Notes
For an easy cleanup, consider using parchment paper in the baking dish. Make the sauce a day in advance for quicker preparation.
