Description

A delicious and healthy dish featuring baked chicken meatballs infused with sage, served over creamy Parmesan orzo.


Ingredients

  • 1 lb ground chicken
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 tbsp fresh sage, chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup additional grated Parmesan cheese for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, egg, sage, garlic, salt, and pepper. Mix until well combined.
  3. Form the mixture into meatballs and place them on a baking sheet lined with parchment paper.
  4. Bake the meatballs in the preheated oven for 20-25 minutes, or until cooked through.
  5. Meanwhile, in a saucepan, bring chicken broth to a boil and add orzo. Cook according to package instructions until al dente.
  6. Stir in heavy cream and additional Parmesan cheese into the cooked orzo.
  7. Serve the baked meatballs over the creamy Parmesan orzo.

Notes

  • For a lighter version, you can use ground turkey instead of chicken.
  • Feel free to add vegetables like spinach or peas to the orzo for extra nutrition.
  • These meatballs can be frozen for later use.
