Description

A comforting and indulgent Southern banana cobbler bursting with flavor from ripe bananas and a tender cake-like base.


Ingredients

  • 1 cup granulated sugar
  • ½ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 cup self-rising flour
  • 1 cup whole milk
  • ½ cup sugar
  • ½ teaspoon ground nutmeg (optional)
  • Toppings (optional): Vanilla ice cream, whipped cream, chopped pecans or walnuts, caramel drizzle

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. Mix the sliced bananas, granulated sugar, melted butter, vanilla extract, cinnamon, and salt in a bowl until well coated.
  3. Prepare the batter by whisking together self-rising flour, milk, sugar, and optional nutmeg until just combined.
  4. Assemble by pouring the batter into the baking dish, then spoon the banana mixture on top without stirring.
  5. Bake for 45-50 minutes until golden brown and set.
  6. Let it rest for 10 minutes before serving.
  7. Serve warm with whipped cream or vanilla ice cream.

Notes

Allow bananas to ripen for maximum sweetness. You can swap bananas for other fruits like peaches or blueberries for variations.
