A delicious and indulgent breakfast casserole featuring layers of cream cheese, blueberries, and French toast.

- 1 loaf of French bread, cubed
- 8 oz cream cheese, softened
- 2 cups fresh blueberries
- 6 large eggs
- 2 cups milk
- 1/2 cup maple syrup
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a greased baking dish, layer half of the cubed French bread.
- Spread the softened cream cheese over the bread cubes.
- Sprinkle half of the blueberries on top of the cream cheese.
- Layer the remaining bread cubes over the blueberries.
- In a bowl, whisk together the eggs, milk, maple syrup, vanilla extract, cinnamon, and salt.
- Pour the egg mixture evenly over the bread layers.
- Top with the remaining blueberries.
- Bake for 45-50 minutes or until the top is golden brown and the casserole is set.
- Let it cool for a few minutes before serving.
Notes
- For a sweeter casserole, add more maple syrup to the egg mixture.
- Can be prepared the night before and refrigerated before baking.
- Serve with additional maple syrup or whipped cream if desired.
