- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 4 ounces semisweet chocolate, chopped
- 1/4 cup heavy cream (for chocolate glaze)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream butter and sugar in a large bowl until light and fluffy.
- Add eggs one at a time, mixing well after each, then stir in vanilla.
- Combine flour, baking powder, and salt in another bowl, then gradually mix into creamed butter until just combined.
- Drop spoonfuls of dough onto lined baking sheets and bake for 10-12 minutes.
- Cool cookies on baking sheets for a few minutes before transferring to a wire rack.
- Whip heavy cream with powdered sugar until soft peaks form.
- Assemble by filling half of the cookies with whipped cream and topping with the remaining cookies.
- Melt chopped chocolate with heavy cream in a double boiler until smooth.
- Drizzle the chocolate glaze over the assembled cookies and let set before serving.
Notes
For best results, chill heavy cream before whipping. Store cookies in an airtight container for up to five days or freeze for up to three months.
