Description

Crispy taquitos filled with spicy buffalo chicken and melted cheese, perfect for sharing at gatherings.


Ingredients

  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 1 cup shredded cheese (cheddar or pepper jack)
  • 8 small flour or corn tortillas
  • Oil for frying
  • Blue cheese or ranch dressing (for dipping)

Instructions

  1. Combine the shredded chicken with the buffalo sauce and cheese until evenly mixed.
  2. Lay a tortilla flat and place a spoonful of the buffalo chicken mixture at the center.
  3. Roll the tortilla tightly around the filling, ensuring no mixture spills out.
  4. Heat about half an inch of oil in a skillet over medium heat.
  5. Carefully place the taquitos seam side down in hot oil, frying for about 3-4 minutes on each side until golden brown.
  6. Use a spatula to flip the taquitos for even cooking, then remove from the skillet and drain on paper towels.
  7. Serve hot with small bowls of blue cheese or ranch dressing.
