Description

Delightful Cajun Deviled Eggs with a creamy filling, crispy coating, and a burst of flavor that embodies Southern hospitality.


Ingredients

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • 1 cup Panko breadcrumbs
  • Oil for frying
  • Chives or paprika for garnish (optional)

Instructions

  1. Hard boil the eggs by placing six large eggs in a pot, filling it with enough water to fully submerge them. Bring the water to a boil over medium-high heat. Once boiling, cover the pot and remove it from heat. Set a timer for 12 minutes. When time’s up, transfer the eggs to an ice bath to cool.
  2. Peel and halve the eggs by gently tapping them on a hard surface to crack the shell, then peel under running water. Cut each egg in half lengthwise and scoop out the yolks into your mixing bowl.
  3. Mix the filling by combining the yolks with three tablespoons of mayonnaise, one teaspoon of Dijon mustard, and one teaspoon of Cajun seasoning until creamy. Season with salt and pepper to taste.
  4. Fill the egg whites by spooning the luscious yolk mixture back into each halved egg white, generously filling each without spilling over.
  5. Coat the eggs by gently dipping each filled egg half into a bowl of Panko breadcrumbs, ensuring a generous coating.
  6. Fry to perfection by heating vegetable oil in a frying pan over medium heat. Carefully add in your coated eggs and fry until golden brown, about 2-3 minutes per side.
  7. Serve and enjoy by transferring the fried eggs onto a plate lined with paper towels to absorb excess oil. Garnish with fresh chives or paprika if desired, and serve warm.

Notes

Make-ahead by preparing the yolk filling a day in advance. Adjust Cajun seasoning for desired spiciness.
