Description

Ingredients

  • 1 head cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 8 small tortillas
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the cauliflower florets with olive oil, cumin, paprika, chili powder, salt, and pepper until well coated.
  3. Spread the seasoned cauliflower on a baking sheet in a single layer.
  4. Roast in the preheated oven for 25-30 minutes, turning halfway through.
  5. Mix the sour cream (or Greek yogurt), chopped cilantro, and lime juice in a bowl for the crema.
  6. Heat the tortillas in a pan or microwave until warm and pliable.
  7. Assemble the tacos by placing roasted cauliflower in each tortilla and drizzling with cilantro lime crema.
