Description

Delicious crostinis topped with a creamy mushroom filling and melted smoked gouda, perfect for gatherings or cozy evenings.


Ingredients

  • 1 lb mushrooms (chanterelle recommended)
  • 1/3 cup water
  • 2 tbsp butter
  • 1 large shallot (finely diced)
  • 3 large garlic cloves (finely minced)
  • 1 1/2 tsp sea salt
  • Ground black pepper (to taste)
  • 2 tbsp port (or marsala wine or chicken broth)
  • 1/3 cup cream (or half-and-half)
  • 6 oz smoked gouda cheese
  • 1/2 cup mayonnaise
  • 3 tbsp fresh chopped dill
  • 3 tbsp fresh chopped parsley
  • 1 baguette

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Melt the butter in a sauté pan over medium heat. Add the shallots and sauté until translucent.
  3. Add the garlic and chopped mushrooms, stirring them together, then pour in the water.
  4. Simmer until tender, about 5-7 minutes. Season with salt and black pepper, then add the port.
  5. Stir in the cream until combined.
  6. Remove from heat and fold in the gouda, mayonnaise, dill, and parsley.
  7. Slice the baguette into 1/2-inch thick pieces and arrange on the baking sheet.
  8. Toast the bread for 5-7 minutes until lightly golden.
  9. Spoon the mushroom mixture onto each toasted piece and bake for an additional 10 minutes.
  10. Serve immediately and enjoy!

Notes

You can prepare the mushroom filling a day in advance. Consider using an air fryer for toasting as a quicker option.
