Delicious crostinis topped with a creamy mushroom filling and melted smoked gouda, perfect for gatherings or cozy evenings.
Ingredients

- 1 lb mushrooms (chanterelle recommended)
- 1/3 cup water
- 2 tbsp butter
- 1 large shallot (finely diced)
- 3 large garlic cloves (finely minced)
- 1 1/2 tsp sea salt
- Ground black pepper (to taste)
- 2 tbsp port (or marsala wine or chicken broth)
- 1/3 cup cream (or half-and-half)
- 6 oz smoked gouda cheese
- 1/2 cup mayonnaise
- 3 tbsp fresh chopped dill
- 3 tbsp fresh chopped parsley
- 1 baguette
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Melt the butter in a sauté pan over medium heat. Add the shallots and sauté until translucent.
- Add the garlic and chopped mushrooms, stirring them together, then pour in the water.
- Simmer until tender, about 5-7 minutes. Season with salt and black pepper, then add the port.
- Stir in the cream until combined.
- Remove from heat and fold in the gouda, mayonnaise, dill, and parsley.
- Slice the baguette into 1/2-inch thick pieces and arrange on the baking sheet.
- Toast the bread for 5-7 minutes until lightly golden.
- Spoon the mushroom mixture onto each toasted piece and bake for an additional 10 minutes.
- Serve immediately and enjoy!
Notes
You can prepare the mushroom filling a day in advance. Consider using an air fryer for toasting as a quicker option.
