Description

A warm, golden-brown sandwich featuring savory chicken, creamy avocado, and melty cheese, perfectly grilled for a delicious experience.


Ingredients

  • 2 boneless skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 avocado, sliced
  • 4 slices of cheese (Swiss, cheddar, or provolone)
  • 4 slices of bread (sourdough, ciabatta, or your choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • Butter or olive oil for grilling

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a skillet over medium-high heat until shimmering.
  3. Add the seasoned chicken and cook for about 6–7 minutes per side until cooked through.
  4. Remove the chicken from the skillet, let it rest, then slice thinly.
  5. Slice the avocado and prepare your cheese while the chicken rests.
  6. Spread mayonnaise and Dijon mustard on one side of each slice of bread.
  7. Layer sliced chicken, avocado, cheese, red onion, and tomato on two slices of bread, mayo side down.
  8. Top with the other slices of bread.
  9. Heat butter or olive oil in the skillet over medium heat.
  10. Grill the sandwiches for about 3–4 minutes per side, pressing down gently to encourage cheese melting.
  11. Remove from skillet, slice in half, and serve warm.

Notes

You can prepare the chicken in advance and store it in an airtight container. For maximum freshness, assemble sandwiches just before eating.
