Description

A comforting Shepherd’s Pie featuring layers of seasoned meat and vegetables topped with creamy Parmesan-infused mashed potatoes.


Ingredients

  • 1 lb ground lamb or beef
  • 1 tbsp cooking oil
  • Salt and pepper (to taste)
  • 2 to 3 tbsp salted butter
  • 1 large onion (diced)
  • 3 medium carrots (diced)
  • 5 to 6 garlic cloves (minced)
  • ½ cup frozen sweet peas (thawed)
  • ½ cup canned corn (drained)
  • 1 tbsp each: fresh chopped thyme, rosemary, and parsley
  • 1 tsp paprika
  • ½ cup red wine (such as Cabernet)
  • 2 to 3 tbsp Worcestershire sauce
  • 2 tbsp tomato paste
  • ¼ cup ketchup or tomato sauce
  • 3 tbsp all-purpose flour
  • 1 cup beef broth
  • 5 to 6 medium potatoes (peeled and cubed)
  • ½ cup salted butter
  • 1 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tbsp fresh chopped parsley
  • 1 tsp fresh thyme
  • Salt (to taste)

Instructions

  1. Prepare the Potatoes: Preheat your oven to 400°F (205°C). Peel and cube the potatoes, placing them in a large pot of salted water. Bring to a boil over medium-high heat and cook for about 15 minutes until fork-tender.
  2. Make the Lamb Filling: Heat a skillet or Dutch oven over medium heat, add cooking oil, then the diced onion. Cook for 3-4 minutes until translucent. Add diced carrots and garlic for another 2-3 minutes. Stir in ground meat and cook until browned, about 5-7 minutes. Drain excess fat.
  3. Add seasonings, peas, corn, red wine, Worcestershire sauce, tomato paste, ketchup, and beef broth. Let simmer and reduce for 10 minutes, then sprinkle flour to thicken.
  4. Make the Mashed Potatoes: Once potatoes are tender, drain and return to the pot. Add butter, garlic powder, Parmesan cheese, and salt, mashing until smooth.
  5. Assemble and Bake: Spread the lamb filling in a greased casserole dish. Layer the mashed potatoes on top, smoothing with a spatula. Bake for 25-30 minutes until golden.

Notes

For an extra crispy layer, broil the pie for 2-3 minutes at the end. You can prepare filling and potatoes ahead of time and store in the fridge.
