Description

Coconut Chicken and Rice is a delicious and flavorful dish that combines tender chicken with creamy coconut milk and fragrant rice, making it a perfect dinner option.


Ingredients

  • 2 cups of jasmine rice
  • 1 can (13.5 oz) of coconut milk
  • 1 lb of chicken thighs, boneless and skinless
  • 1 cup of chicken broth
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 tablespoon of ginger, grated
  • 2 tablespoons of soy sauce
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a large pot, heat olive oil over medium heat and sauté the chopped onion, garlic, and ginger until fragrant.
  3. Add the chicken thighs to the pot and cook until browned on all sides.
  4. Stir in the coconut milk, chicken broth, soy sauce, salt, and pepper.
  5. Add the rinsed rice to the pot and bring the mixture to a boil.
  6. Reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and the chicken is tender.
  7. Remove from heat and let it sit covered for an additional 5 minutes.
  8. Fluff the rice with a fork and serve garnished with fresh cilantro.

Notes

  • For added flavor, marinate the chicken in soy sauce and ginger for a few hours before cooking.
  • You can substitute chicken thighs with chicken breasts if preferred.
  • Feel free to add vegetables like bell peppers or peas for extra nutrition.
