Description

A savory and satisfying dish combining corn, bacon, and zucchini in a rice slice that is perfect for any meal.


Ingredients

  • 1 cup cooked rice
  • 1 cup corn kernels
  • 4 strips of bacon, chopped
  • 1 medium zucchini, grated
  • 2 eggs
  • 1/2 cup grated cheese
  • 1/4 cup milk
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a large bowl, combine the cooked rice, corn, chopped bacon, grated zucchini, eggs, grated cheese, and milk.
  3. Season with salt and pepper, mixing well until all ingredients are combined.
  4. Pour the mixture into a greased baking dish.
  5. Bake for 30-35 minutes or until the top is golden brown and set.
  6. Allow to cool slightly before slicing and serving.

Notes

  • For a vegetarian option, omit the bacon and add more vegetables.
