Ingredients
- Corn Tortillas
- Cooked Chicken Breast, shredded
- White Beans
- Chicken Broth
- Green Chilies
- Onion, diced
- Garlic, minced
- Cumin
- Oregano
- Salt
- Pepper
Instructions
- Heat some oil in a large pot over medium heat. Sauté the diced onion and minced garlic until soft and golden.
- Stir in the shredded chicken, white beans, green chilies, chicken broth, cumin, oregano, salt, and pepper. Stir well.
- Bring the mixture to a gentle simmer, and cook for about 15–20 minutes.
- Warm the corn tortillas in a skillet over medium heat.
- Spoon the chili mixture into the warmed tortillas and add your favorite toppings.
Notes
Make the chili a day in advance for deeper flavors. Use an Instant Pot for a quicker version.
