Description

Comforting tacos filled with creamy white chicken chili, perfect for weeknight dinners.


Ingredients

  • Corn Tortillas
  • Cooked Chicken Breast, shredded
  • White Beans
  • Chicken Broth
  • Green Chilies
  • Onion, diced
  • Garlic, minced
  • Cumin
  • Oregano
  • Salt
  • Pepper

Instructions

  1. Heat some oil in a large pot over medium heat. Sauté the diced onion and minced garlic until soft and golden.
  2. Stir in the shredded chicken, white beans, green chilies, chicken broth, cumin, oregano, salt, and pepper. Stir well.
  3. Bring the mixture to a gentle simmer, and cook for about 15–20 minutes.
  4. Warm the corn tortillas in a skillet over medium heat.
  5. Spoon the chili mixture into the warmed tortillas and add your favorite toppings.

Notes

Make the chili a day in advance for deeper flavors. Use an Instant Pot for a quicker version.
