A delicious and healthy crustless quiche made with cottage cheese, perfect for breakfast or brunch.

- 1 cup cottage cheese
- 4 large eggs
- 1 cup spinach, chopped
- 1/2 cup bell pepper, diced
- 1/2 cup onion, diced
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the cottage cheese, eggs, salt, pepper, and garlic powder until well combined.
- Add the chopped spinach, bell pepper, onion, and shredded cheese to the mixture and stir until evenly distributed.
- Pour the mixture into a greased pie dish or quiche pan.
- Bake in the preheated oven for 30-35 minutes, or until the quiche is set and lightly golden on top.
- Allow to cool for a few minutes before slicing and serving.
Notes
- Feel free to add other vegetables or meats to customize your quiche.
- This quiche can be served warm or cold.
- Store leftovers in the refrigerator for up to 3 days.
