Description

A delicious and healthy crustless quiche made with cottage cheese, perfect for breakfast or brunch.


Ingredients

  • 1 cup cottage cheese
  • 4 large eggs
  • 1 cup spinach, chopped
  • 1/2 cup bell pepper, diced
  • 1/2 cup onion, diced
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the cottage cheese, eggs, salt, pepper, and garlic powder until well combined.
  3. Add the chopped spinach, bell pepper, onion, and shredded cheese to the mixture and stir until evenly distributed.
  4. Pour the mixture into a greased pie dish or quiche pan.
  5. Bake in the preheated oven for 30-35 minutes, or until the quiche is set and lightly golden on top.
  6. Allow to cool for a few minutes before slicing and serving.

Notes

  • Feel free to add other vegetables or meats to customize your quiche.
