Description

Cottage Cheese Raspberry Mousse is a light and creamy dessert that combines the tangy flavor of cottage cheese with the sweetness of fresh raspberries, creating a delightful treat perfect for any occasion.

Ingredients

Scale
  • 1 cup cottage cheese
  • 1 cup fresh raspberries
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 1 tablespoon lemon juice

Instructions

  1. In a blender, combine cottage cheese, raspberries, honey (or maple syrup), vanilla extract, and lemon juice. Blend until smooth.
  2. In a separate bowl, whip the heavy cream until soft peaks form.
  3. Gently fold the whipped cream into the raspberry mixture until well combined.
  4. Pour the mousse into serving dishes and refrigerate for at least 2 hours to set.
  5. Serve chilled, garnished with additional raspberries if desired.

Notes

  • For a vegan version, substitute cottage cheese with silken tofu and use coconut cream instead of heavy cream.
  • Adjust the sweetness according to your taste preference.
  • This mousse can be made a day in advance for convenience.
