- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter

Instructions
- Preheat your oven to 375°F (190°C) and generously grease each cup of the mini muffin tin.
- Whisk together the flour, sugar, baking powder, and salt in a bowl until well combined.
- Mix the milk, egg, and melted butter in another bowl until fully integrated.
- Pour the wet ingredients into the dry and combine gently, stirring until just mixed.
- Spoon the batter into each muffin cup, filling them about 2/3 full.
- Bake for 12-15 minutes, or until golden and a toothpick inserted into the center comes out clean.
- Allow to cool slightly before gently popping them out of the muffin tin.
- Serve warm with your favorite toppings.
Notes
Make the batter the night before for a quick breakfast. Try cooking in an air fryer for a crispier texture.
