Description

Delightful mini pancake poppers that transform your breakfast into a joyous occasion with their fluffy texture and sweet taste.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • Toppings of choice (maple syrup, fresh fruit, whipped cream)

Instructions

  1. Preheat your oven to 375°F (190°C) and generously grease each cup of the mini muffin tin.
  2. Whisk together the flour, sugar, baking powder, and salt in a bowl until well combined.
  3. Mix the milk, egg, and melted butter in another bowl until fully integrated.
  4. Pour the wet ingredients into the dry and combine gently, stirring until just mixed.
  5. Spoon the batter into each muffin cup, filling them about 2/3 full.
  6. Bake for 12-15 minutes, or until golden and a toothpick inserted into the center comes out clean.
  7. Allow to cool slightly before gently popping them out of the muffin tin.
  8. Serve warm with your favorite toppings.

Notes

Make the batter the night before for a quick breakfast. Try cooking in an air fryer for a crispier texture.
