- 2 large cucumbers
- 1/2 cup plain Greek yogurt
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon sugar
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon sesame seeds
- 2 green onions, chopped
Instructions
- Wash and slice the cucumbers into thin rounds.
- In a bowl, mix together the Greek yogurt, rice vinegar, soy sauce, sesame oil, sugar, salt, and black pepper until smooth.
- Add the sliced cucumbers to the dressing and toss to coat evenly.
- Sprinkle sesame seeds and chopped green onions on top.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- For a spicier version, add a pinch of red pepper flakes.
