- 2 cups cooked chicken, shredded
- 1 cup cottage cheese
- 1 tablespoon taco seasoning
- 8 small corn tortillas
- 1 tablespoon olive oil
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- 1/2 cup shredded cheese (optional)
Instructions
- In a bowl, mix the shredded chicken, cottage cheese, and taco seasoning until well combined.
- Heat olive oil in a skillet over medium heat.
- Place a tortilla in the skillet and add a portion of the chicken mixture on one half of the tortilla.
- Fold the tortilla over and cook until the edges are crispy and golden brown, about 3-4 minutes per side.
- Repeat with remaining tortillas and filling.
- Serve tacos topped with lettuce, tomatoes, cilantro, and cheese if desired.
Notes
- For extra flavor, add avocado or salsa as toppings.
