Description

Delicious and creamy chicken tacos made with cottage cheese, featuring crispy edges for a delightful texture.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cottage cheese
  • 1 tablespoon taco seasoning
  • 8 small corn tortillas
  • 1 tablespoon olive oil
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1/2 cup shredded cheese (optional)

Instructions

  1. In a bowl, mix the shredded chicken, cottage cheese, and taco seasoning until well combined.
  2. Heat olive oil in a skillet over medium heat.
  3. Place a tortilla in the skillet and add a portion of the chicken mixture on one half of the tortilla.
  4. Fold the tortilla over and cook until the edges are crispy and golden brown, about 3-4 minutes per side.
  5. Repeat with remaining tortillas and filling.
  6. Serve tacos topped with lettuce, tomatoes, cilantro, and cheese if desired.
