Description

A hearty and comforting soup that combines rich flavors and creamy texture, perfect for chilly days.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup heavy cream
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add chopped onion and minced garlic to the pot, cooking until the onion is translucent.
  3. Stir in the beef broth, diced tomatoes, corn, black beans, chili powder, cumin, salt, and pepper.
  4. Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes.
  5. Stir in the heavy cream and heat through, but do not boil.
  6. Serve hot, garnished with fresh cilantro.

Notes

  • For a spicier version, add diced jalapeños.
  • This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
  • Freeze leftovers in an airtight container for up to 3 months.
