- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) corn, drained
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup heavy cream
- 2 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
- Add chopped onion and minced garlic to the pot, cooking until the onion is translucent.
- Stir in the beef broth, diced tomatoes, corn, black beans, chili powder, cumin, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes.
- Stir in the heavy cream and heat through, but do not boil.
- Serve hot, garnished with fresh cilantro.
Notes
- For a spicier version, add diced jalapeños.
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
- Freeze leftovers in an airtight container for up to 3 months.
