Description

A delicious and creamy salmon dish featuring spinach and roasted red peppers, perfect for a healthy dinner.


Ingredients

  • 4 salmon fillets
  • 2 cups fresh spinach
  • 1 cup roasted red peppers, chopped
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  3. Add spinach and roasted red peppers, cooking until spinach is wilted.
  4. Pour in heavy cream and bring to a simmer, then stir in Parmesan cheese until melted.
  5. Season salmon fillets with salt and pepper, then place them in a baking dish.
  6. Pour the creamy spinach and red pepper mixture over the salmon.
  7. Bake in the preheated oven for 20-25 minutes, or until salmon is cooked through.
