- 4 salmon fillets
- 2 cups fresh spinach
- 1 cup roasted red peppers, chopped
- 1 cup heavy cream
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Add spinach and roasted red peppers, cooking until spinach is wilted.
- Pour in heavy cream and bring to a simmer, then stir in Parmesan cheese until melted.
- Season salmon fillets with salt and pepper, then place them in a baking dish.
- Pour the creamy spinach and red pepper mixture over the salmon.
- Bake in the preheated oven for 20-25 minutes, or until salmon is cooked through.
- Serve hot and enjoy!
Notes
- For a lighter version, substitute heavy cream with Greek yogurt.
