Savor the flavor of crispy Lebanese Arayes, filled with ground lamb, fragrant herbs, and warm spices, offering a delightful crunch and soft interior.

- 1 lb ground lamb
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- ½ cup flat-leaf parsley, finely chopped
- 1 medium tomato, grated or minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- ½ tsp allspice
- ½ tsp cinnamon
- Salt and black pepper, to taste
- 1 tbsp olive oil
- 4 large Lebanese-style pita breads
- Olive oil for brushing
- ½ cup grated Gruyere cheese (optional)
- 1 spoonful Rao’s Sauce (optional)
Instructions
- In a large bowl, combine the ground lamb, minced garlic, chopped onion, grated tomato, parsley, and a medley of spices. Drizzle in olive oil to bind everything together.
- Slice each pita in half carefully to create two pockets.
- Spoon several tablespoons of the spiced meat mix into each pita pocket, pressing down lightly.
- If using, sprinkle Gruyere cheese or Rao’s Sauce inside for added richness.
- Lightly coat the outside of each stuffed pita with olive oil.
- Preheat your grill or skillet over medium heat. Cook the stuffed pitas for about 3–4 minutes on each side until golden.
- Once they reach a perfect golden color, remove the Arayes from heat and cut each pocket into wedges.
Notes
Make-ahead: Prepare the filling a day in advance. Use an air fryer for quicker cooking.
