- 4 boneless chicken thighs
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon paprika
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- Vegetable oil for frying
- 4 sandwich buns
- Thai chili sauce
- Fresh cilantro leaves
- Pickled cucumbers
Instructions
- Marinate the chicken thighs in buttermilk for at least 2 hours or overnight.
- In a bowl, mix flour, cornstarch, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper.
- Heat vegetable oil in a deep pan over medium heat.
- Remove chicken from buttermilk, allowing excess to drip off, then coat in the flour mixture.
- Fry the chicken in hot oil until golden brown and cooked through, about 5-7 minutes per side.
- Drain on paper towels and let cool slightly.
- Assemble the sandwich by placing the fried chicken on a bun, adding Thai chili sauce, cilantro, and pickled cucumbers.
- Serve immediately and enjoy!
Notes
- For extra crunch, double-dip the chicken in buttermilk and flour mixture.
- Adjust the spice level by adding more or less cayenne pepper.
