Description

Crockpot Huli Huli Chicken is a flavorful and easy-to-make dish that combines tender chicken with a sweet and tangy Hawaiian-inspired sauce, perfect for busy weeknights.


Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 green onions, chopped (for garnish)

Instructions

  1. Place the chicken thighs in the crockpot.
  2. In a bowl, mix together pineapple juice, soy sauce, brown sugar, ketchup, garlic, ginger, black pepper, and red pepper flakes.
  3. Pour the sauce over the chicken in the crockpot.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  5. Once cooked, shred the chicken with two forks and mix it back into the sauce.
  6. Serve hot, garnished with chopped green onions.

Notes

  • For a thicker sauce, you can remove the chicken once cooked and simmer the sauce on the stove until it reduces.
  • This dish pairs well with rice or steamed vegetables.
  • Feel free to adjust the sweetness by adding more or less brown sugar.
