Description

A savory and nutritious dish combining eggs and vegetables with a delightful curry flavor, perfect for any meal.


Ingredients

  • 6 large eggs
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1/2 cup milk
  • 1 cup grated cheese
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat olive oil over medium heat and sauté onions and garlic until translucent.
  3. Add mixed vegetables and curry powder, cooking for an additional 5 minutes.
  4. In a bowl, whisk together eggs, milk, salt, and pepper.
  5. Stir in the sautéed vegetables and grated cheese into the egg mixture.
  6. Pour the mixture into a greased baking dish.
  7. Bake for 25-30 minutes or until the top is golden and set.
  8. Allow to cool slightly before slicing and serving.
