Instructions
- Preheat the oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat and sauté onions and garlic until translucent.
- Add mixed vegetables and curry powder, cooking for an additional 5 minutes.
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Stir in the sautéed vegetables and grated cheese into the egg mixture.
- Pour the mixture into a greased baking dish.
- Bake for 25-30 minutes or until the top is golden and set.
