- 2 cups roasted red peppers, pureed
- 1 onion, chopped

Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent.
- Add the pureed roasted red peppers and paprika, stirring to combine.
- Season the sauce with salt and pepper.
- Place the cod fillets in a baking dish and pour the sauce over them.
- Bake for 20-25 minutes or until the cod is cooked through and flakes easily with a fork.
- Garnish with fresh parsley before serving.
