Description

A flavorful dish featuring cod fillets cooked in a rich roasted red pepper sauce, perfect for a weeknight dinner.


Ingredients

  • 4 cod fillets
  • 2 cups roasted red peppers, pureed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent.
  3. Add the pureed roasted red peppers and paprika, stirring to combine.
  4. Season the sauce with salt and pepper.
  5. Place the cod fillets in a baking dish and pour the sauce over them.
