Description

A delicious and easy recipe for creamy fiesta chicken made in a slow cooker, perfect for busy weeknights.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Add the black beans, corn, diced tomatoes, and taco seasoning on top of the chicken.
  3. Pour the chicken broth over the mixture.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, add the cream cheese and cheddar cheese, stirring to combine.
  6. Season with salt and pepper to taste before serving.
