- 2 lbs boneless, skinless chicken breasts
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 cup cream cheese
- 1 cup shredded cheddar cheese
- 1/2 cup chicken broth
- Salt and pepper to taste
Instructions
- Place the chicken breasts in the slow cooker.
- Add the black beans, corn, diced tomatoes, and taco seasoning on top of the chicken.
- Pour the chicken broth over the mixture.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, add the cream cheese and cheddar cheese, stirring to combine.
- Season with salt and pepper to taste before serving.
