Description

Delicious and healthy muffins made with rolled oats and grated carrots, perfect for a nutritious snack or breakfast.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup brown sugar (or coconut sugar)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup grated carrots (about 2 medium carrots)
  • 1/2 cup applesauce or yogurt
  • 1/4 cup vegetable oil or melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/4 cup walnuts or raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the rolled oats, brown sugar, baking powder, baking soda, cinnamon, and salt in a large mixing bowl.
  3. Add the grated carrots, applesauce or yogurt, vegetable oil, and vanilla extract; mix until just combined.
  4. Fold in the nuts or raisins if using.
  5. Fill a greased or lined muffin tin with the batter, filling each cup about 2/3 full.
  6. Bake for 20-25 minutes, until a toothpick inserted in the center comes out clean.
  7. Cool in the tin for a few minutes before transferring to a wire rack.

Notes

Perfect for busy mornings, these muffins can be made ahead and frozen for later enjoyment.
