- 8 oz rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup black beans, drained and rinsed
- 1 cup corn, canned or frozen
- 1 cup shredded cheddar cheese
- 1 cup diced bell pepper
- 1/2 cup red onion, diced
- 1 cup taco sauce
- 1 cup sour cream
- 2 cups Doritos, crushed
- 1 tablespoon taco seasoning
Instructions
- Cook the rotini pasta according to package instructions. Drain and let cool.
- In a large bowl, combine the cooked pasta, cherry tomatoes, black beans, corn, cheddar cheese, bell pepper, and red onion.
- In a separate bowl, mix together the taco sauce, sour cream, and taco seasoning.
- Pour the dressing over the pasta salad and toss to combine.
- Just before serving, fold in the crushed Doritos for added crunch.
- Serve chilled or at room temperature.
