Description

A flavorful grilled chicken dish marinated in Moroccan spices, perfect for summer evenings.


Ingredients

  • 4 boneless skinless chicken breasts (6 oz each)
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon minced garlic
  • 1 tablespoon minced fresh ginger
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon turmeric
  • 1/3 cup chopped fresh cilantro (plus more for serving)
  • Salt and freshly ground black pepper

Instructions

  1. Pound the chicken breasts to ensure even cooking.
  2. Prepare the marinade by whisking together olive oil, lemon juice, garlic, ginger, cumin, coriander, paprika, cinnamon, turmeric, and salt and pepper.
  3. Marinate the chicken in a resealable bag with the marinade for at least 2 hours or up to 8 hours.
  4. Preheat your grill to medium-high heat (about 425°F).
  5. Grill the chicken for about 4 minutes on each side or until reaching an internal temperature of 165°F.
  6. Rest the chicken for 5 minutes before serving.

Notes

Marinate overnight for deeper flavor absorption. Use a meat thermometer to ensure chicken is safely cooked.
