- 4 boneless skinless chicken breasts (6 oz each)
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon minced garlic
- 1 tablespoon minced fresh ginger
- 1 1/2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon turmeric
- 1/3 cup chopped fresh cilantro (plus more for serving)
- Salt and freshly ground black pepper
Instructions
- Pound the chicken breasts to ensure even cooking.
- Prepare the marinade by whisking together olive oil, lemon juice, garlic, ginger, cumin, coriander, paprika, cinnamon, turmeric, and salt and pepper.
- Marinate the chicken in a resealable bag with the marinade for at least 2 hours or up to 8 hours.
- Preheat your grill to medium-high heat (about 425°F).
- Grill the chicken for about 4 minutes on each side or until reaching an internal temperature of 165°F.
- Rest the chicken for 5 minutes before serving.
Notes
Marinate overnight for deeper flavor absorption. Use a meat thermometer to ensure chicken is safely cooked.
