Description

A delicious Hawaiian Chicken Bowl featuring marinated chicken, fresh vegetables, and tropical flavors.


Ingredients

  • 2 cups cooked rice
  • 1 lb chicken breast, diced
  • 1/4 cup soy sauce
  • 1/4 cup pineapple juice
  • 1 tablespoon olive oil
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1/2 cup carrots, sliced
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix soy sauce, pineapple juice, and olive oil. Add diced chicken and marinate for at least 30 minutes.
  2. Heat a skillet over medium heat and add the marinated chicken. Cook until browned and cooked through.
  3. Add bell pepper, broccoli, and carrots to the skillet. Stir-fry until vegetables are tender.
  4. Serve the chicken and vegetables over cooked rice.
  5. Garnish with chopped green onions and enjoy!

Notes

  • For a spicier version, add red pepper flakes.
  • Can substitute chicken with tofu for a vegetarian option.
