A delicious Hawaiian Chicken Bowl featuring marinated chicken, fresh vegetables, and tropical flavors.
Ingredients

- 2 cups cooked rice
- 1 lb chicken breast, diced
- 1/4 cup soy sauce
- 1/4 cup pineapple juice
- 1 tablespoon olive oil
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1/2 cup carrots, sliced
- 1/4 cup green onions, chopped
- Salt and pepper to taste
Instructions
- In a bowl, mix soy sauce, pineapple juice, and olive oil. Add diced chicken and marinate for at least 30 minutes.
- Heat a skillet over medium heat and add the marinated chicken. Cook until browned and cooked through.
- Add bell pepper, broccoli, and carrots to the skillet. Stir-fry until vegetables are tender.
- Serve the chicken and vegetables over cooked rice.
- Garnish with chopped green onions and enjoy!
Notes
- For a spicier version, add red pepper flakes.
- Can substitute chicken with tofu for a vegetarian option.
