- ¼ cup pure maple syrup (60 ml)
- ⅔ cup unsweetened almond butter (160 g)
- 2 cups quick oats (214 g)
- ½ tsp sea salt
- ¾ cup fresh strawberries (chopped into small chunks, 110 g)
- 1 tsp pure vanilla extract
- 1½ tsp ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- Mash the ripe bananas in a large mixing bowl until creamy.
- Combine the pure maple syrup and unsweetened almond butter, mixing until smooth.
- Mix in the quick oats and sea salt until fully incorporated.
- Fold in the chopped strawberries gently.
- Shape the cookies by dropping mounds of dough onto a baking sheet.
- Bake for 10-15 minutes until golden brown.
- Cool on the baking sheet for 10 minutes, then transfer to a wire rack.
Notes
Allow the cookie dough to rest before baking for better texture. You can make the dough ahead and refrigerate it for up to 24 hours.
