Description

Ingredients

  • 2 large ripe bananas (mashed, approx. ⅔ cup)
  • ¼ cup pure maple syrup (60 ml)
  • ⅔ cup unsweetened almond butter (160 g)
  • 2 cups quick oats (214 g)
  • ½ tsp sea salt
  • ¾ cup fresh strawberries (chopped into small chunks, 110 g)
  • 1 tsp pure vanilla extract
  • 1½ tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the ripe bananas in a large mixing bowl until creamy.
  3. Combine the pure maple syrup and unsweetened almond butter, mixing until smooth.
  4. Mix in the quick oats and sea salt until fully incorporated.
  5. Fold in the chopped strawberries gently.
  6. Shape the cookies by dropping mounds of dough onto a baking sheet.
  7. Bake for 10-15 minutes until golden brown.
  8. Cool on the baking sheet for 10 minutes, then transfer to a wire rack.

Notes

Allow the cookie dough to rest before baking for better texture. You can make the dough ahead and refrigerate it for up to 24 hours.
