Warm, hearty Herbed Ricotta Stuffed Chicken Rolls filled with creamy ricotta, fresh spinach, and fragrant herbs, topped with a rich marinara sauce.

- 4 pieces Boneless, Skinless Chicken Breasts
- 1 cup Ricotta Cheese
- 1/3 cup Grated Parmesan Cheese
- 2 cups Fresh Spinach
- 1/4 cup Fresh Basil
- 1/4 cup Fresh Parsley
- 1 teaspoon Garlic Powder
- Salt and Pepper to taste
- 1 cup Marinara Sauce
- 2 tablespoons Olive Oil
- 1/2 teaspoon Crushed Red Pepper Flakes (optional)
- Toothpicks or Kitchen Twine (as needed)
Instructions
- Prep the chicken: Place each chicken breast between two sheets of plastic wrap and pound until about 1/2 inch thick.
- Create the filling by combining ricotta cheese, grated Parmesan, fresh spinach, basil, parsley, garlic powder, salt, and pepper in a mixing bowl.
- Assemble the rolls: Place a spoonful of filling on each chicken breast, roll tightly, and secure with toothpicks or twine.
- Sear the rolls in a frying pan with olive oil over medium-high heat for 3-4 minutes until golden brown on all sides.
- Add marinara sauce over the chicken rolls and allow to simmer for 10-15 minutes.
- Serve hot, garnished with fresh herbs and extra marinara if desired.
Notes
Prepare the rolls in advance and store them covered in the fridge for up to 24 hours. You can also air fry for a lighter version.
