- 2 pieces Boneless Skinless Chicken Breasts
- 1 tablespoon Cajun Seasoning
- 2 tablespoons Olive Oil
- 12 ounces Linguine Pasta
- Salt and Black Pepper to taste
- 2 tablespoons Unsalted Butter
- 5 cloves Garlic, minced
- 1.5 cups Heavy Cream
- 1.5 cups Freshly Grated Mozzarella Cheese
- 0.25 cup Freshly Grated Parmesan Cheese
- 0.5 teaspoon Red Pepper Flakes
- 0.5 teaspoon Dried Oregano
- 0.25 teaspoon Onion Powder
- 0.25 cup Reserved Pasta Water
Instructions
- Cook the Linguine: Fill a large pot with salted water, bring it to a boil, and cook the linguine according to package instructions. Reserve ¼ cup of the pasta water before draining.
- Season the Chicken: Pat the chicken breasts dry with paper towels. Sprinkle Cajun seasoning over both sides of the chicken generously.
- Sauté the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove and let it rest before slicing.
- Create the Sauce: In the same skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Pour in the heavy cream and bring to a gentle simmer.
- Add the Cheese: Gradually whisk in the mozzarella and Parmesan cheese until melted. Stir in red pepper flakes, oregano, onion powder, salt, and pepper.
- Combine Pasta and Sauce: Add the cooked linguine to the skillet and toss to coat. If the sauce is too thick, add reserved pasta water until desired consistency.
- Finish and Serve: Slice the chicken and place it atop the linguine. Toss gently and serve immediately with extra cheese if desired.
Notes
This dish can be made ahead and stored in the fridge for up to three days. Reheat gently and add milk/cream to restore the sauce’s consistency.
