Description

Delicious and fluffy pancakes inspired by traditional Spanish churros, coated in cinnamon sugar for a sweet breakfast treat.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/4 cup sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. In a mixing bowl, combine flour, sugar, baking powder, salt, and ground cinnamon.
  2. In another bowl, whisk together milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Heat a non-stick skillet over medium heat and pour 1/4 cup of batter for each pancake.
  5. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. In a small bowl, mix together the sugar and cinnamon for coating.
  7. Once pancakes are cooked, immediately coat them in the cinnamon sugar mixture.
  8. Serve warm with syrup or chocolate sauce if desired.

Notes

  • For extra flavor, add vanilla extract to the batter.
  • These pancakes can be made ahead and reheated in the toaster.
  • Serve with whipped cream or fresh fruit for a complete breakfast.
