- 1 cup Cottage Cheese
- 2 tablespoons Olive Oil
- 1 large Egg
- 1 cup All-Purpose Flour
- 1 teaspoon Baking Powder
- 1 teaspoon Salt
- 2 cups Baby Spinach, finely chopped
- 1 cup Shredded Mozzarella Cheese
Instructions
- Preheat the oven to 375°F (190°C).
- Mix the cottage cheese, olive oil, and egg in a mixing bowl until creamy.
- Combine the flour, baking powder, and salt in another bowl, whisking together.
- Add the chopped spinach and shredded mozzarella to the wet mixture.
- Combine the dry ingredients with the wet mixture until just combined.
- Shape the dough into small bagel-like shapes on a baking sheet lined with parchment paper.
- Bake for about 20-25 minutes until golden brown.
- Cool on a wire rack before serving.
