A flavorful sandwich featuring marinated chicken thighs, sweet and spicy glaze, and a refreshing cabbage slaw.

- 1 lb Boneless Skinless Chicken Thighs
- 1/4 cup Soy Sauce
- 2 tbsp Brown Sugar
- 2 tbsp Honey
- 2 tbsp Gochujang
- 2 tbsp Rice Vinegar
- 1 tbsp Sesame Oil
- 4 cloves Garlic, finely minced
- 1 inch Fresh Ginger, grated
- 2 cups Shredded Green and Red Cabbage
- 1 cup Julienned Carrot
- 1/2 cup Mayonnaise
- 1 tbsp Sugar
- 4 pieces Brioche or Potato Sandwich Buns
- 2 tbsp Butter
Instructions
- Start by preparing the marinade. In a mixing bowl, combine the soy sauce, brown sugar, honey, gochujang, rice vinegar, sesame oil, minced garlic, and grated ginger. Whisk until smooth.
- Place the boneless chicken thighs in a large resealable bag or bowl, pouring the marinade over them. Ensure every piece is thoroughly coated. Seal or cover and refrigerate for at least 30 minutes, or preferably overnight for deeper flavor.
- Heat a grill or skillet over medium-high heat. Once hot, add the marinated chicken thighs, discarding any excess marinade.
- Cook the chicken for about 6-7 minutes on each side or until cooked through and nicely caramelized. An internal temperature of 165°F signifies it’s done.
- Remove the chicken from heat, allowing it to rest for a few minutes before slicing.
- While the chicken rests, prepare the slaw. In a clean bowl, whisk together mayonnaise, sugar, and rice vinegar. Toss in shredded cabbage and julienned carrots, mixing until the veggies are well-coated.
- Meanwhile, melt butter in a skillet. Toast the brioche or potato buns until golden and slightly crispy.
- To assemble, layer the sliced chicken on the bottom half of the bun. Generously spoon the zesty cabbage slaw on top and crown with the other half. Secure with a skewer if needed.
Notes
Maximize flavor by marinating chicken overnight. Consider using an air fryer for healthier cooking.
