Description

A colorful, flavor-packed bowl of crispy potatoes topped with zesty beef or black beans, gooey cheese, and fresh toppings for a fiesta experience in every bite.


Ingredients

  • 4 medium russet potatoes, diced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp ground cumin
  • Salt & pepper to taste
  • 1 lb ground beef or black beans
  • 1 packet taco seasoning
  • 1 cup shredded cheddar or Mexican blend cheese
  • ½ cup sour cream or Greek yogurt
  • ½ cup salsa
  • ¼ cup sliced green onions
  • ¼ cup chopped cilantro
  • Optional: diced tomatoes, corn, jalapeños, or olives

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the diced potatoes in a mixing bowl with olive oil, chili powder, smoked paprika, garlic powder, ground cumin, salt, and pepper.
  3. Spread the seasoned potatoes on a baking sheet in a single layer.
  4. Roast for 25-30 minutes, flipping halfway through.
  5. While potatoes bake, heat a skillet over medium heat and cook the ground beef or black beans until browned.
  6. Sprinkle taco seasoning over the cooked beef or beans and add a couple of tablespoons of water. Simmer until thickened.
  7. Remove potatoes and immediately sprinkle cheese on top to melt.
  8. Top with seasoned meat or beans, fresh salsa, green onions, cilantro, and a dollop of sour cream or Greek yogurt.
  9. Serve immediately.

Notes

Make-Ahead Tips: Prep potatoes in advance and keep them in the fridge. Adjust cooking times for frozen fries. Use an air fryer for quicker cooking.
