Description

Ingredients

  • Salt, to taste
  • Black pepper, to taste
  • 1 avocado

  • ½ cup cottage cheese
  • Everything But The Bagel seasoning (optional)

Instructions

  1. Prepare the hash browns: If using frozen hash browns, follow the package instructions to cook them until crispy.
  2. Scramble the eggs: Heat a non-stick skillet over medium heat, scramble the eggs and season with salt and black pepper.
  3. Mash the avocado: Use a fork to smash the avocado in a mixing bowl and season.
  4. Assemble the dish: Place the crispy hash browns on a serving plate and spread smashed avocado over them.
  5. Top with scrambled eggs, dividing them among the hash browns.
  6. Add cottage cheese evenly on top of the eggs.
  7. Finish off with Everything But The Bagel seasoning, if desired.
