- Everything But The Bagel seasoning (optional)
Instructions
- Prepare the hash browns: If using frozen hash browns, follow the package instructions to cook them until crispy.
- Scramble the eggs: Heat a non-stick skillet over medium heat, scramble the eggs and season with salt and black pepper.
- Mash the avocado: Use a fork to smash the avocado in a mixing bowl and season.
- Assemble the dish: Place the crispy hash browns on a serving plate and spread smashed avocado over them.
- Top with scrambled eggs, dividing them among the hash browns.
- Add cottage cheese evenly on top of the eggs.
- Finish off with Everything But The Bagel seasoning, if desired.
- Serve immediately and enjoy!
