Description

Delicious Loaded Potato Taco Bowl with crispy roasted potatoes, savory ground meat, and fresh toppings for a comforting meal.


Ingredients

  • 2 large potatoes, diced
  • 1 cup ground beef or turkey
  • 1 tablespoon taco seasoning
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup lettuce, shredded
  • 1 cup cheese, shredded
  • Olive oil, salt, and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced potatoes with olive oil, salt, and pepper until evenly coated. Spread them on a baking sheet in a single layer and roast for about 25-30 minutes, turning halfway through.
  3. Cook the ground meat in a skillet over medium heat until browned. Add taco seasoning and mix well.
