Description

A comforting one-pan meal featuring kielbasa, colorful vegetables, and a sticky honey garlic glaze.


Ingredients

  • 1 pound Kielbasa
  • 2 tablespoons Honey
  • 3 cloves Garlic, minced
  • 2 tablespoons Soy Sauce
  • 1 each Bell Pepper (red & yellow), sliced
  • 1 cup Baby Carrots
  • 1 pound Baby Potatoes, halved
  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Parsley or Green Onions, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the baby potatoes with olive oil, salt, and pepper in a large skillet or on a sheet pan. Spread them in a single layer.
  3. Roast the baby potatoes in the oven for 15 minutes.
  4. Mix together honey, minced garlic, and soy sauce in a small bowl.
  5. Add the sliced kielbasa, bell peppers, and baby carrots to the pan and drizzle with the honey garlic mixture.
  6. Toss gently to coat all ingredients in the glaze.
  7. Return the pan to the oven and roast for an additional 20-25 minutes, stirring once halfway through.
  8. Sprinkle with chopped parsley or green onions before serving.

Notes

Make ahead by chopping vegetables and slicing kielbasa the night before. Store in the fridge for a quicker prep time.
