- 1 pound Kielbasa
- 2 tablespoons Honey
- 3 cloves Garlic, minced
- 2 tablespoons Soy Sauce
- 1 each Bell Pepper (red & yellow), sliced
- 1 cup Baby Carrots
- 1 pound Baby Potatoes, halved
- 2 tablespoons Olive Oil
- 2 tablespoons Fresh Parsley or Green Onions, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the baby potatoes with olive oil, salt, and pepper in a large skillet or on a sheet pan. Spread them in a single layer.
- Roast the baby potatoes in the oven for 15 minutes.
- Mix together honey, minced garlic, and soy sauce in a small bowl.
- Add the sliced kielbasa, bell peppers, and baby carrots to the pan and drizzle with the honey garlic mixture.
- Toss gently to coat all ingredients in the glaze.
- Return the pan to the oven and roast for an additional 20-25 minutes, stirring once halfway through.
- Sprinkle with chopped parsley or green onions before serving.
Notes
Make ahead by chopping vegetables and slicing kielbasa the night before. Store in the fridge for a quicker prep time.
