- 2 large eggs (at room temp)
- 1/2 cup Greek yogurt (or sour cream)
- 1/2 cup white granulated sugar
- 1 tsp vanilla extract
- 1/3 cup unsalted butter (melted)
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp sea salt
- 1 tsp ground cinnamon
- 1 1/2 cups grated carrots (about 2 large carrots)
- 1/2 cup pistachios (diced)
- 8 oz cream cheese (softened at room temp)
- 2 tbsp heavy cream
- Pinch of sea salt
- 2 cups powdered sugar
- Orange food coloring (optional)
- 2 tbsp finely diced pistachios (for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it lightly.
- In a large mixing bowl, whisk together the eggs, Greek yogurt, sugar, vanilla extract, and melted butter until smooth and thoroughly combined.
- Sift in the flour, baking powder, baking soda, salt, and cinnamon. Fold gently with a spatula, being careful not to overmix.
- Stir in the grated carrots and diced pistachios until evenly distributed.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
- Beat the softened cream cheese in a mixing bowl until creamy and smooth.
- Add the heavy cream, vanilla extract, and a pinch of sea salt. Mix until well combined.
- Gradually add the powdered sugar, mixing on low speed until completely integrated and creamy. If using, add orange food coloring carefully until the desired hue is reached.
- Pipe or create cute carrot decorations with the cream cheese frosting over the top of the cooled bread for a festive touch.
- Sprinkle the finely diced pistachios over the frosting for extra crunch.
Notes
Serve slices with a sprinkle of cinnamon or a drizzle of honey for added flavor. Store wrapped tightly at room temperature for up to five days.
