Description

A delightful Pistachio Carrot Bread topped with creamy cheese frosting, perfect for any occasion.


Ingredients

  • 2 large eggs (at room temp)
  • 1/2 cup Greek yogurt (or sour cream)
  • 1/2 cup white granulated sugar
  • 1 tsp vanilla extract
  • 1/3 cup unsalted butter (melted)
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 1 tsp ground cinnamon
  • 1 1/2 cups grated carrots (about 2 large carrots)
  • 1/2 cup pistachios (diced)
  • 8 oz cream cheese (softened at room temp)
  • 2 tbsp heavy cream
  • Pinch of sea salt
  • 2 cups powdered sugar
  • Orange food coloring (optional)
  • 2 tbsp finely diced pistachios (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it lightly.
  2. In a large mixing bowl, whisk together the eggs, Greek yogurt, sugar, vanilla extract, and melted butter until smooth and thoroughly combined.
  3. Sift in the flour, baking powder, baking soda, salt, and cinnamon. Fold gently with a spatula, being careful not to overmix.
  4. Stir in the grated carrots and diced pistachios until evenly distributed.
  5. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  6. Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  8. Beat the softened cream cheese in a mixing bowl until creamy and smooth.
  9. Add the heavy cream, vanilla extract, and a pinch of sea salt. Mix until well combined.
  10. Gradually add the powdered sugar, mixing on low speed until completely integrated and creamy. If using, add orange food coloring carefully until the desired hue is reached.
  11. Pipe or create cute carrot decorations with the cream cheese frosting over the top of the cooled bread for a festive touch.
  12. Sprinkle the finely diced pistachios over the frosting for extra crunch.

Notes

Serve slices with a sprinkle of cinnamon or a drizzle of honey for added flavor. Store wrapped tightly at room temperature for up to five days.
