Description

A delicious and hearty slow cooker recipe featuring tender beef and flavorful garlic butter, served with potatoes.


Ingredients

  • 2 lbs beef chuck roast
  • 4 cloves garlic, minced
  • 1/2 cup unsalted butter
  • 1 lb baby potatoes, halved
  • 1 cup beef broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried rosemary

Instructions

  1. Season the beef chuck roast with salt and pepper.
  2. In a skillet, melt the butter and sauté the minced garlic until fragrant.
  3. Place the beef in the slow cooker and pour the garlic butter over it.
  4. Add the halved baby potatoes and beef broth to the slow cooker.
  5. Sprinkle thyme and rosemary over the top.
  6. Cover and cook on low for 8 hours or high for 4 hours.
  7. Once cooked, shred the beef and serve with potatoes and sauce.
