- 2 lbs beef chuck roast
- 4 cloves garlic, minced
- 1/2 cup unsalted butter
- 1 lb baby potatoes, halved
- 1 cup beef broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 tsp dried rosemary
Instructions
- Season the beef chuck roast with salt and pepper.
- In a skillet, melt the butter and sauté the minced garlic until fragrant.
- Place the beef in the slow cooker and pour the garlic butter over it.
- Add the halved baby potatoes and beef broth to the slow cooker.
- Sprinkle thyme and rosemary over the top.
- Cover and cook on low for 8 hours or high for 4 hours.
- Once cooked, shred the beef and serve with potatoes and sauce.
