Description

Slow Cooker Street Corn Chicken is a delicious and easy-to-make dish that combines tender chicken with the flavors of street corn, perfect for a family meal or gathering.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1/4 cup chopped cilantro
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Add the corn, cream cheese, cheddar cheese, mayonnaise, cilantro, lime juice, chili powder, salt, and pepper.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Once cooked, shred the chicken with two forks and mix well with the sauce.
  6. Serve warm, garnished with additional cilantro if desired.
