Description

Ingredients

  • 1 can (14 oz) coconut milk
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons red curry paste
  • 1 tablespoon lime juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Stir in garlic and ginger, cooking for another minute.
  4. Add chicken thighs and cook until browned on all sides.
  5. Mix in red curry paste, coconut milk, lime juice, salt, black pepper, and cayenne pepper.
  6. Bring to a simmer and cook for 20-25 minutes until chicken is cooked through.
  7. Garnish with fresh cilantro before serving.
