Description

A refreshing salad that combines grilled corn and crisp cucumbers in a creamy dressing, perfect for warm weather gatherings.


Ingredients

  • 2 ears of corn
  • 1 large cucumber
  • 1/4 cup red onion
  • 1/4 cup fresh cilantro
  • 1/2 cup Greek yogurt
  • 1 tablespoon mayonnaise
  • 1 clove garlic
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or grill pan over medium-high heat. Grill the corn for about 10-12 minutes, rotating occasionally until the kernels become beautifully charred.
  2. Cool slightly, then slice the kernels off the cob into a mixing bowl.
  3. Dice your cucumber, chop the red onion, and roughly chop the cilantro. Add them to the bowl with the corn.
  4. Whisk together Greek yogurt, mayonnaise, minced garlic, lime juice, chili powder, salt, and pepper until smooth in a separate bowl.
  5. Pour the dressing over the corn and vegetables, gently tossing until everything is evenly coated.
  6. Cover and chill in the refrigerator for at least 30 minutes before serving.

Notes

Prepare the salad up to a day in advance for enhanced flavor. For grilling alternatives, you can boil the corn instead.
