- 2 ears of corn
- 1 large cucumber
- 1/4 cup red onion
- 1/4 cup fresh cilantro
- 1/2 cup Greek yogurt
- 1 tablespoon mayonnaise
- 1 clove garlic
- 1 tablespoon lime juice
- 1/2 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Preheat your grill or grill pan over medium-high heat. Grill the corn for about 10-12 minutes, rotating occasionally until the kernels become beautifully charred.
- Cool slightly, then slice the kernels off the cob into a mixing bowl.
- Dice your cucumber, chop the red onion, and roughly chop the cilantro. Add them to the bowl with the corn.
- Whisk together Greek yogurt, mayonnaise, minced garlic, lime juice, chili powder, salt, and pepper until smooth in a separate bowl.
- Pour the dressing over the corn and vegetables, gently tossing until everything is evenly coated.
- Cover and chill in the refrigerator for at least 30 minutes before serving.
Notes
Prepare the salad up to a day in advance for enhanced flavor. For grilling alternatives, you can boil the corn instead.
