- 4 boneless, skinless chicken breasts
- 1 cup pineapple chunks (fresh or canned)
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup ketchup
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1/4 cup green onions (for garnish)
Instructions
- Place the chicken breasts in the crockpot.
- In a bowl, mix together the pineapple chunks, soy sauce, brown sugar, ketchup, garlic, and ginger.
- Pour the sauce over the chicken in the crockpot.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, shred the chicken with two forks and mix it back into the sauce.
- Serve over rice and garnish with green onions.
Notes
- For a thicker sauce, remove the chicken and let the sauce simmer on the stove for a few minutes.
- This dish pairs well with steamed vegetables.
