- 2 lbs boneless, skinless chicken thighs
- 1 cup pineapple chunks (fresh or canned)
- 1 cup teriyaki sauce
- 1/2 cup brown sugar
- 1/4 cup soy sauce
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1/2 teaspoon black pepper
- 1/4 cup green onions (for garnish)
Instructions
- Place the chicken thighs in the crockpot.
- In a bowl, mix together the pineapple chunks, teriyaki sauce, brown sugar, soy sauce, garlic, ginger, and black pepper.
- Pour the sauce mixture over the chicken in the crockpot.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- Once cooked, shred the chicken with two forks and mix it back into the sauce.
- Serve hot, garnished with green onions.
